I would be lying if I said I didn’t get a little excited every year when Starbucks releases the seasonal Pumpkin Spiced Latte. In fact, I get jazzed about all things pumpkin in the fall! Maybe it’s because I grew up in Florida and never really had a fall season, and now I feel like I’m making up for lost time? Who knows! All this to say, I’m absolutely in love with this time of year, and that includes fun fall beverages!
Remember back in July when I was raving about the new Baileys Almande almondmilk liqueur? Well, it only makes sense to break it out again for a fun and festive fall cocktail combining my love of fall flavors and my love of dairy-free beverages!
I love making my own pumpkin spiced lattes at home because they’re super easy to make, contain all REAL ingredients, and are absolutely delicious. Add in a splash of deliciously creamy dairy free Baileys and you’ve got yourself the holy grail of fall cocktail recipes!
Baileys Almande Pumpkin Spiked Latte Recipe
(Makes two servings)

4 oz. Baileys Almande
2-4 shots of espresso, depending on how strong you want it to be (you could use strong coffee as well)
2 cups of almond milk (I used unsweetened vanilla flavored)
2 tablespoons canned pumpkin
2 tablespoons sugar (you could also use a few drops of vanilla liquid stevia for a lighter option)
1/2 teaspoon of pumpkin pie spice
1 tablespoon vanilla extract (if you use vanilla stevia, I would leave this out)
Whipped cream (if you want to keep it dairy free, you can buy dairy free whipped cream or use this coconut milk recipe that I swear by!)
Cinnamon or chocolate drizzle for garnish
Heat your almond milk in a saucepan over medium high heat. Stir in your pumpkin until it’s hot and steamy. Add in your sugar or stevia and remove from heat. Stir in your vanilla and spices.
Add 2 oz. of Baileys Almande to each mug. Then, pour the milk mixture into each mug (make sure to leave a little room!). Next, pour one espresso shot into each mug. I used a Nespresso machine to make mine, and it was amazing. I’m sure the coffee would taste just as great, just be sure to add a little less milk and a little more coffee to get the flavors just right!
Top with whipped cream and your desired garnishes, and voila! You’re ready to enjoy your new favorite fall cocktail.
